"This is just God in a bowl..." ~ Sam's review of Panera's Cream Cheese Potato Soup





Um...can you say Easy-Peasy-Lemon-Squeezy-God-in-a-bowl-delicious-deliciousness??? Mm-hmm...thought ya could.

Got some potatoes? A little onion? Some cream cheese way back in that fridge drawer?? Get it out and get soupin'...

(I think I love it so much because it's just like runny mashed potatoes... ;)

Panera's Cream Cheese Potato Soup
(aka "God in a Bowl")

4 cups chicken broth
4 cups peeled and cubed potatoes
1/4 cup minced onion
1/2 teaspoon seasoning salt
1/4 teaspoon white pepper
1/4 teaspoon ground red pepper
1 8 oz. package cream cheese, cut into chunks

Combine broth, potatoes, onion and spices. Bring to boil and cook over medium heat until potatoes are tender.

Mash or blend potatoes to thicken (you may need to add more liquid, depending on your consistency preference). Reduce heat to low. Add cream cheese. Stir and heat until melted.


Yum.


I used water instead of chicken broth, so that my vegetarian boy could enJoy it as well. I just used regular salt. I didn't have white pepper, so I used black.

And the REALLY sad part?? I only had THREE POTATOES IN THIS ENTIRE HOUSE!! So I had to reduce the recipe, and we each only got a ladle and a half of soup. So Jake and I stood around, scraping and licking everything else that had even a little bit of soup on it until there was not a smidgen of it left anywhere.





Yes, it's THAT good.

Oh, thank you so much for posting this. I wish I could share my CRAZY supply of potatoes with you. I've probably got about 15 pounds! Somehow our farm share has given us more than we can possibly use, every week a big bag full. I'll definitely try this with some of them for tomorrow night. Yum!

I made this for dinner tonight and yes, it was heavenly! Very creamy and tasty and enjoyed by everyone. I used soft goat's cheese instead of the cream cheese for my lactose intolerant eater. :-)

We also made this soup on Monday night. Delicious! We're still eating leftovers (made lots, and the boys did not partake...they DO NOT know what they are missing!), so I got to enjoy it for lunch as well! :) YUMMMMMMMMM!

We made it tonight - YUM!!!! In fact, YUM doesn't cover it - so creamy and delicious! I did put mine in the Vitamix so it was like silk. That helps my eaters who don't like chunks :) Thanks for posting the recipe.
