
Oh I LOVE my children's birthdays!! Besides being able to TRULY Honor and Celebrate them All Day Long, there are LOADS of culinary treats in store!
The day started with our favorite birthday breakfast...a breakfast from my Hungarian Papa's family tradition: Hungarian Palacsinta (pronounced pola-chinta) (crepes).
Jake wanted them this morning with sauteed apples, so I sliced some up, cooked them until they were sort of soft in some butter, then added some cinnamon sugar.

The recipe for the batter:
Mix 3 eggs with 1 cup flour and a little salt (I use part whole wheat, part unbleached white, and sometimes I add some wheat bran flakes). Gradually whisk in 1 cup of milk. Mixture will be runny. Refrigerate for 1 hour before using.
After one hour, heat a pan on medium high heat. Spread some butter in it (work fast, as it's HOT!), and pour in some palacsinta batter. Tip the pan around to spread the batter into a thin crepe.

When the top appears dry, flip it over and then remove from the pan after just a few seconds.

Fill with your favorite filling...we love the apple filling or Nutella (or even better ~ Jake's fave: the apple filling AND Nutella). I grew up using jellies and jams (apricot is my fave palacsinta jam flavor) and topped with powdered sugar.


Jake is deep. While I was making his palacsinta, he was outside, breathing in the beauty of the day, connecting to the earth in celebration of his birthday.

After Jake came home from work, I made us all our own made-to-order grilled pizzas. Jake had the classic margarita ~ tomatoes, fresh basil and fresh mozzarella...

Sam had my invention of a Hawaiian...tomoatoes, ham, pineapple, and cheese...

Sam wasn't feeling well, so while he slept, Jake and I went to the movies to see 9.

Then Dave brought home dinner...YUP!...FISH TACOS!!!...

These are our favorites, straight from Fiesta Mexicana in Oneonta.

Lovely lovely day celebrating an amazing, wonderful human being.

We've made your Papa's Hungarian Palacsintas twice now (again just this morning) and wanted to share how much we love them- with homemade applesauce, with blueberries, with powdered sugar- yum!
Oh, Jen! Thank you so much for telling me! It brought tears to my eyes, because it felt sweetly honoring of my 89-year old Papa, who is too busy loving life, working/living his passions, and learning every day to be an old man (shhh...he doesn't know he's *supposed* to be an old man!!). :)
