I have been wanting to make gnocchi for a long time, and I just finally DID it!! It's not that complicated and it's oh so delicious. Potatoes...mmm...I do love my starchy foods!!
I used this recipe that my dear friend, Pam Laricchia, shared with me: Handmade Gnocchi. There are loads of other versions on-line, and I want to try some different versions I came across on the Food Network website (Giada's gnocchi's with cinnamon butter??? Come ON!! YUM!!).
But these were simple and a good introduction for us.

Scooped out meat from 3 large baked potatoes...
