(Picture shown is Jake's taco made with vegetarian Taco Crumbles, not chicken!)This recipe is from the book Whole Grains for Busy People. But I didn't use the exact recipe. I used ideas from the recipe. I'll explain more as I go...
I made the sour cream:
1 cup reduced fat sour cream
1 teaspoon smoked Spanish paprika (I used more)
1/4 cup freshly squeezed lime juice
1/2 teaspoon salt
I made the spice mixture for the chicken:
2 teaspoons chili powder
2 teaspoons dried oregano
1 teaspoon ground cumin
1 teaspoon granulated garlic
But I didn't use ground chicken, like the recipe calls for. I used chicken breasts cut into thin strips. I cooked them in a bit of oil over med-high heat until they were thoroughly done, added a bit of water, then added some of the spice mixture. Yum.
We used whole grain tortillas.
And I made my own red salsa (Bobby Flay's recipe from Mesa Grill, and it is To Die For Delicious...I'll share the recipe in my next post)...

And I made my own salsa verde...

And I made my own guacamole...

And we also added some roasted poblano chiles.
The sour cream is DEEEEEElicious and really *made* the tacos fantastic...
