This morning I didn't check with my honey's schedule before I went out on my exercise walk, and subsequently, he didn't have time to get a bike ride in before work (he didn't want to leave our puppy, Roxi, alone in the house...well not alone...Sam was there, but sleeping...). I felt bad, even though he was sweetly understanding and not upset at all. Still, I wanted to make it up to him, so what better thing to do when he wasn't able to burn some calories this morning? Add even MORE!! As long as it's chocolate and it's cake, my man is a happy man. And THIS chocolate cake is his favorite.
This recipe is from my Mom, so I asked her if there was a story behind it. She wrote:
Hey, Anne ~ the only story I know is that the recipe is from a Norwegian ~ Amy Q's friend, Hege, who lives in Lexington, MA. I don't know if it's traditional or something they claim is traditional ~ but it sure is good!!!! xo Mom
So that means no. No story. Sorry.
Norwegian (supposedly) Chocolate Sheet Cake
Preheat 350.
Boil:
1 c. water
2 sticks butter (1/2 pound)
1/3 cup unsweetened cocoa powder
In a bowl, mix 2 cups sugar, 2 eggs, 1/2 cup sour/buttermilk, 1/2 tsp. salt, 1 tsp. bak soda. Add 2 cups flour, 1/2 tsp. cinnamon, 1 1/2 tsp. vanilla & the cooled chocolate mixture.
Pour into greased jelly roll pan. Bake 25 - 30 min.
Pour hot frosting over warm cake and spread evenly.
Frosting ~
Bring to boil: 1/4 cup butter (4 Tablespoons), 3 tablespoons cocoa, 3 tablespoons sour/buttermilk (I personally don't understand how you can *boil* this, as it's not a very *wet* mixture...I just melt the butter and stir it all up). Remove from heat and beat in 2 1/4 cups confectioners sugar and 1/2 teaspoon vanilla. Beat smooth.

Uff da! This looks just like a Texas Sheet Cake that my mom makes (minus the ubiquitous Texas pecans *grin*). Then again, my mom is Norwegian... Such a yummy cake! :)
What do you mean, you cringe when you hear it calls for TWO STICKS OF BUTTER? When I see that, I immediately think, YUM! :) And how do you make chocolate chip cookies with anything less than that?! I think I'll go pull 2 sticks out of the fridge this very moment, just in case the urge to bake something will strike, hee hee.
I love that you know it as a Texas Sheet Cake, and yet it has a Norwegian connection, too!!
And Rachel ~ Good point, sassy girl!! When you get *older* like me, those sticks of butter tend to stick to your hips (and belly and butt) more! So *that's* what goes through *my* mind!! And it's alarming how fast this cake disappears, too, where cookies tend to last us longer... (Thanks for your comment, sweetie!! Love you!! :)
