In fact, we kind of have this dream of Sam (Sam O) opening a sandwich shop, and calling it
Sam O's Sammos.
This particular sammo is one of Jake's favorite lunches, and I think he first heard of it on an episode of Oprah.

So, ya take your good ole reliable grilled cheese and you fancy it up a bit.
We use a cast iron grill pan and panini press. We use whole grain bread. We use whatever cheese happens to be in the cheese drawer of the fridge. Today, that was either cheddar, American, fresh mozzarella or a bag of a shredded pizza blend. Jake was bummed that we were out of provolone and swiss. So he chose cheddar. I chose American. So did Sam.
This is whatcha do:
Butter outside of bread. Place butter side down on preheated grill pan. Add a layer of cheese. Add a layer of thinly sliced apples. Add basil leaves. Add a generous amount of honey. Add another layer of cheese. Top with the other piece of bread, butter side up.

You know the rest...carefully flip it when it's ready and grill the other side. We press it w/the panini press at this point.

Yes!! I KNOW the combination of ingredients sounds strange. But You Will Be Pleasantly Surprised!!!! It truly is PHENOMENAL!!

Sam saw that we had some prosciutto in the meat drawer, so he opted for a grilled American cheese & prosciutto sammo. Oh, and throw some basil on there,too, please, Mom.

Mmmm...he loved it.

I LOVE glorified grilled cheese!! The best one I ever had was at Cafe Lalo in NYC (This is actually the restaurant in "You've Got Mail" where Meg Ryan's character waits to meet her online date--only to be met with Tom Hank's character). It was a white cheddar, spinach and feta on a croissant--grilled to perfection!! YUM!!
Mmmm...that sounds good, Sage! I'll have to add that place to our list of NYC food places to visit! And yes...we LOVE grilled cheeses on croissants!! Our first was at the top of the John Hancock building in Chicago. I made one last week on a croissant w/cheese and Red Pepper Jelly (it has some heat, but not too much). DEEE-LISH!! And Denise...you are so so sweet. <3
