Jake didn't need to be in Vermont at Not Back to School Camp until 4:30 p.m., and it's about a 4 hour drive from our house...but we still left home at 9:30 a.m. for some wonderful stops along the way...one of them being fish tacos for lunch from Cantina in Saratoga Springs.
These were MOST excellent!! I knew from the description that I read from their on-line menu that these would be worth the stop, as they make their own corn tortillas and it was beer battered snapper with smoked chipotle mayo. We all voted and decided that these Cantina Baja Fish Tacos were our favorites thus far in our quest to sample them ALL!!

Because we had the pups with us, we got our order to go and ate in the park. Our family has a wonderful history with this park, as we've been going to Saratoga Springs for about 10 years now. We love this city, and our activities have evolved and changed throughout the years, beginning with trips to the library and the children's museum and the park to shopping and going to concerts and eating good foods!! I learned how to juggle in this park many years ago, as one day we were walking and I asked a juggling mean to teach me.
However, eating on the park on this day was not an easy thing to do. The dogs had been cramped in the Jeep Wrangler for 2 hours, walked through a VERY busy downtown in Saratoga (country dogs, ya know...), and the park was the location of their Civil War Reenactment Day (cannons going off and corgis are not a good mix). So we kind of had to eat in shifts and keep the dogs engaged in other activities besides trying to eat our food (can't exactly blame 'em for trying...after all, the food WAS on the ground...dog-level and all...).

After our delicious lunch, we got back in the Wrangler (four tall people, two dogs and gear for one week of camping packed in a two door Wrangler...it was a tight fit) and headed to Vermont. We still had time to kill, so we took our time and stopped along the way whenever we wanted to.At camp, we set up Jake's tent with him, talked to some friends, and I felt SO happy about my boy's stay there this week...he was just SHINING with Joy, and the fact that he had his new Bogs boots for warm and dry feet, along with his own TENT for privacy and warmer sleeping added to my own peace of mind and heart.

After checking on the pups in the Wrangler, we headed back to Jake's tent site. Jake said to Sam, "Let's skip!" And Sam DID!!! (Jake and I say that and do that a LOT, and RARELY does anyone else join us!!)

After we talked to a few more people and were ready to leave, we saw a small. yet ever-growing crowd gathered around our Wrangler to give their love to our pups.

We hugged old friends and met new...

...and then left our boy, knowing and Trusting that all is exactly as it should be...he is exactly where he needs/wants to be...and that is pretty close to Sheer Heaven.

I miss you, my Jake!!
EnJoy.

Sounds like a shiny day full of joy and love. :)
I just wanted to let you know, since you will be passing thru Atlanta in the near future, there is a fish taco place that has had lots of talk. It's Tacqueria del Sol in Decatur, and although I haven't been there, I have been across the street at Watershed, which is really great. It is jointly owned by Emily the Indigo Girl and chef Scott Peacock. You should check it out! Also, Woodfire Grill, which is really fantastic, is in Atlanta, the chef/owner is currently appearing on Top Chef.
Thanks for all the inspiration (and great recipes!).
