Veggie Lasagna a la Sam and Jake!




No, that's not the veggie lasagna!! Before we do that, Sam and I thought his lunch was photo-worthy (although I must apologize, as we can't seem to find the GOOD camera since we got home from the river on Sunday...so I had to use the less-than-wonderful-quality camera, and it shows, darn it!).

It's a left-over smoked pork chop from The Alpine Wurst & Meat House in Honesdale, PA (surprisingly, Jake isn't completely turned off by this store, being a vegetarian!!...there are so many cool German things in there, including the Schmeichelei taffy that the German club used to sell when I was in high school!...and that babka we bought...OY!!...we bought 1/4 cake of a cheese babka and I ate most of it myself on Saturday...WAY too delicious!).

Sam put some leftover homemade kraut on the chop and some sauteed green onions and cherry tomatoes. Yum.

On to the lasagana...

Since my back is in pain and my throat is sore and I have been working all day on my conference talk for the upcoming Toronto Unschooling Conference, I asked Jake and Sam if they wanted to make the lasagna for dinner. We went over the recipe together and they figured they could handle it. What a gift for me!!

I'm sorry to hear you aren't feeling good. I trust your back and throat will be better soon. When you have some time could you share how you make sauerkraut? It's something I've been thinking about doing.

Thanks, Kathy! We didn't make the sauerkraut...we got it at the Alpine Wurst & Meat house. It does seem like a cool *old world* thing to make, doesn't it??
